Please Welcome Back the American Butcher…

America’s slowly growing food revolution is making it’s way to our favorite food group: meat.  All signs, including the rise of craft, whole-animal butcher shops across the U.S., suggest that the almost extinct butcher is alive and well.

The clip below is from Cochon 555, a competitive culinary event that pits butchers against one another in an endurance race to cut and package an entire pig.  Jimmy The Butcher is from Marczyk Fine Foods, right here in Denver.
